What is IDDSI?
IDDSI stands for the International Dysphagia Diet Standardisation Initiative. It is a globally recognised framework used to describe food textures and drink thickness for people who have difficulty swallowing.
IDDSI was developed to create a consistent and evidence based way to prepare, label, and serve food and fluids safely across healthcare, aged care, disability, and community settings. Before IDDSI, different terms and definitions were used in different regions, which increased the risk of confusion and swallowing related incidents.
-
People with dysphagia require food and drinks that match their swallowing ability. When texture and thickness are inconsistent or poorly understood, the risk of choking and aspiration increases.
IDDSI provides a shared language that allows clinicians, kitchens, carers, and food service staff to work from the same standards. This consistency improves safety, reduces errors, and supports better clinical outcomes.
-
The IDDSI framework classifies foods and drinks into levels based on their texture and thickness. These levels range from thin fluids through to regular foods, with specific categories for pureed, minced, moist, and soft textures.
Each level is defined using simple testing methods that can be performed in a kitchen environment. These tests help ensure that food and drinks meet the required standard every time, regardless of who prepares them.
-
IDDSI is used worldwide by speech pathologists, dietitians, nurses, chefs, food service teams, and care providers. It is applied in hospitals, aged care facilities, disability services, and home care settings.
By using IDDSI, everyone involved in a persons care can communicate clearly and confidently about dietary requirements.
-
Correct implementation of IDDSI supports safer swallowing, reduces the risk of aspiration, and helps ensure people receive adequate nutrition and hydration. It also improves consistency across shifts, teams, and facilities.
When IDDSI standards are followed correctly, food service becomes safer, more reliable, and easier to manage while preserving dignity and choice for the person eating.
